Milkfish presto (Javanese: ꦤꦤ꧀ꦢꦨꦼꦁꧦꦿꦺ꧀ꦠꦦꦴ, translit. Milkfish presto) is a typical Indonesian food from Juwana region, Pati Regency, Central Java and Gresik, East Java. Milk fish (Chanos chanos) is used to make this dish with garlic, turmeric and salt.
The milk is then cooked on a banana leaf mat in the presto way. Presto is an advanced steam cooking system. Food cooked in this way is placed in a pot that can be easily sealed. The water in the pan is brought to a boil. The steam released will cook the food in this pan. Because milkfish is known to have many spines, milkfish presto is a popular dish because the presto method of cooking these spines is slow.

How to do it
Step 1

When it smells, add clean water. Let it cook.

After boiling, add the fried milk. Mix well, add salt, sugar, broth powder (if any). Boil until the water reduces and the spices go into the fish. Taste test. After assembly, turn off the stove. Step 5
